2 ingredient sweet potato gnocchi
My favourite aspect of creating new dishes in the kitchen is discovering a new one that is SIMPLE and DELICIOUS. Growing up in an Italian family I certainly appreciate the effort that went into making real home made gnocchi. However, it isn't ideal for someone trying to cut back on gluten or someone who is very busy. This recipe makes 2 servings.
- 1 medium size sweet potato
- 1 cup of arrowroot flour
- 2 tablespoons of extra virgin olive oil for cooking
Preheat oven to 400 degrees.
Cut sweet potato in half and cook on a pan with parchment paper face down for 20 minutes or until sweet potato is soft.
Once it's cooked and cooled down a bit, remove sweet potato skin.
Place sweet potato in a blender or food processor until it turns into a mash. You may need to add a tablespoon of water.
In a mixing bowl, mix sweet potato mash with 1 cup of arrowroot flour. You can do this with your hands. It should form a dough consistency.
Roll the dough into 3 or 4 long sausage shapes and slice the sausages into bite size gnocchi. You can press into the gnocchi with a fork to give it an authentic look.
On high heat place gnocchi on a pan with olive oil and cook for a couple of minutes on each side. They cook fast!
Serve with your favourite sauce, some basil or on it's own.
