delicious pumpkin ginger smoothie
I had some leftover pumpkin slices that I froze after making my pumpkin soup, so I thought I would put it to good use in a delicious smoothie. Let the pumpkin slices thaw for a few minutes before blending. This recipe is for one smoothie.
- 1/2 cup frozen pumpkin slices
- 1 banana
- 1 cup of almond milk (or dairy-free milk of your choice)
- 1 teaspoon of freshly grated ginger
- 1 teaspoon of cinnamon
- 1/2 teaspoon of vanilla extract
Blend all ingredients. Serve chilled. Yum!
