bananas for banana bread
Banana bread is probably one of my favourite treats. I had a lot of fun figuring out which alternative ingredients to use to make this wonderful dessert vegan and gluten free. The result is just as delicious! This recipe makes a small loaf in a 9x5 pan.
- 3 ripe bananas
- 2 and a half cups of almond flour (or almond meal)
- 1/2 cup of coconut sugar
- 1/2 cup of arrowroot starch
- dash of salt
- 2 teaspoons of cinnamon
- 1 teaspoon of baking soda
- 1 teaspoon of vanilla extract
- 1 tablespoon of apple cider vinegar
Preheat the oven to 350 degrees.
Mash the bananas in a bowl until they are almost liquid.
Add all other ingredients to the mix and stir until smooth, add the apple cider vinegar last.
Immediately after adding the apple cider vinegar and stirring it in, pour the mix into a 9x5 loaf pan.
Bake for an hour, check after 45 minutes. You should be able to put a toothpick through it and have it come out dry. The top should also be cracking slightly.
