banana breakfast muffins
I wouldn't typically recommend muffins for breakfast. Many of the muffins sold at coffee shops contain a lot of refined sugar, and it's tough to find a gluten free/vegan option.
However -- MY special banana breakfast muffins are just fine ;)
They're perfect if you don't have time to cook something up in the morning or for a quick energy boost. This recipe makes 5 muffins.
- 1 cup of oats
- 1 banana
- 1 cup of almond milk
- 1 teaspoon of coconut oil
- 1 teaspoon of cinnamon
- 1 cup of dates (soaked in warm water for 20 minutes)
- 1/3 cup of organic maple syrup
Blend oats until a powder forms. (Oat Flour)
Add the dates and almond milk.
Add banana, cinnamon and maple syrup.
Line the muffin pan with coconut oil.
Pour mix into tray.
Bake at 350 degrees for 1 hour.
Serve with all natural peanut butter, sprinkle some shredded coconut on top, or enjoy the muffins on their own!
