beet + lentil hummus
I love making bean dips as you may have noticed! This one is pretty simple but a nice change up from traditional hummus. I also love the colour of it! This dip would serve 4-6 people.
- 1 can of lentils rinsed and drained (1.5 cups)
- 2 small beets peeled and diced OR half a can of sliced beets rinsed
- 1 tablespoon of tahini
- 1 tablespoon of lemon juice (1/2 lemon)
- dash of salt to taste
- 1 teaspoon of cumin
Blend all ingredients. Top with sesame seeds or parsley.
