beet + lentil hummus

I love making bean dips as you may have noticed! This one is pretty simple but a nice change up from traditional hummus. I also love the colour of it! This dip would serve 4-6 people.

Ingredients:

  • 1 can of lentils rinsed and drained (1.5 cups)
  • 2 small beets peeled and diced OR half a can of sliced beets rinsed
  • 1 tablespoon of tahini
  • 1 tablespoon of lemon juice (1/2 lemon)
  • dash of salt to taste
  • 1 teaspoon of cumin

Directions:

Blend all ingredients. Top with sesame seeds or parsley.
