black bean and avocado brownies
Black beans + avocados = chocolate brownies!? Well, not quite. But those ARE two of the main ingredients. I was happy with how delicious and moist these healthy brownies turned out. I also think an amazing addition would be some dairy free ice cream! This recipe makes 6 medium sized brownies in a muffin pan.
- 1 can of black beans (drained and rinsed)
- 3/4 cup of raw cacao powder
- 1/2 avocado
- 1 cup of almond milk
- 1 cup of almond flour
- 1/4 teaspoon of vanilla extract
- 1/3 cup of coconut sugar
- 1/3 cup of organic maple syrup
- 1 tablespoon of coconut oil
- 1/4 cup of crushed walnuts for topping
Preheat oven to 350 degrees.
Blend black beans with almond milk until pureed.
Add the rest of the ingredients except walnuts.
Blend until everything is mixed evenly. The mix should look like thick chocolate pudding.
Line a muffin pan with cupcake liners, or coconut oil so that batter doesn't stick.
Once the batter is poured, add crushed walnuts on top.
Bake for 1 hour and 20 minutes or until you can stick a fork in a brownie and it comes out clean.
Extra topping ideas: shredded coconut, peanut butter, your favourite nuts!
