cauliflower mashed potatoes

This is one of those dishes that has people saying "yum" out loud. It's a go-to appetizer when I'm hosting because it's easy, most people with health restrictions can eat it and it's also just fun to see people's reaction when I tell them it's actually made mostly of cauliflower. This recipe can serve 4 people as a side.

Ingredients:

  • 1 head of cauliflower cut into florets
  • 1 cup of almond milk
  • 1 clove of garlic, minced
  • 2 tablespoons of extra virgin olive oil
  • 1/3 cup of nutritional yeast
  • 1/2 teaspoon of sea salt

Directions:

Boil the cauliflower with water until it's cooked through and soft. (about ten minutes)

Drain the water and add cauliflower to the blender with almond milk, garlic, olive oil, nutritional yeast and sea salt.

Blend all ingredients until creamy. You may need to add a couple of tablespoons of water for preferred consistency.
