This was so tasty that my meat eating partner said it might be one of his favourites! And there's not one trace of actual steak in this recipe ;)
One head of cauliflower will make about four steaks which I used as two servings.
- 1 head of cauliflower
- juice from half a lemon (1 tablespoon)
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of dried rosemary
- a dash of salt and pepper
- 4 small fresh tomatoes
- 1 jalapeno
Preheat oven to 350 degrees.
Cut the stem off of the bottom of the cauliflower and slice into vertical pieces.
You will lose some smaller pieces, you can save those or cook them up as well.
Mix olive oil, lemon juice and garlic powder in a small bowl.
Brush the mix onto each cauliflower steak.
Slice the tomatoes and jalapenos, brush more of the mix onto the tomatoes.
Add the rosemary and a dash of salt and pepper onto the cauliflower.
Cook the cauliflower steaks for ten minutes on each side, brushing each piece with more mix once you flip.
Cook the tomatoes and jalapenos together but separately from the steaks, this will be the topping and it will cook faster (about ten minutes)
Serve the steaks topped with tomatoes and jalapenos.
Enjoy your steaks! I garnished mine with basil (because basil is good on everything) but you can garnish however you like. These are also yummy with BBQ sauce or organic tomato sauce.
