savory breakfast: crushed chickpeas + spinach
This recipe was born from what was left in my house on a Friday with no groceries. It's quick and easy, gives you a nice serving of protein for breakfast, plus it's delicious! This recipe makes 2 servings.
- 1 can of chickpeas, rinsed and drained
- 1/4 cup of yellow onion, diced
- 1 clove of garlic, minced
- 1 tablespoon of extra virgin olive oil
- dash of salt to taste
- 1 teaspoon of cumin
- 1/2 lemon (optional)
- 4 cups of spinach
Crush chickpeas with a fork in a bowl.
On medium heat in a pan, add chickpeas with olive oil, onion, garlic, cumin and salt and saute for about 5 minutes.
Once the chickpea mix is done remove from pan and throw on the spinach with a tablespoon of water. It will cook fast!
Serve the chickpeas on a bed of spinach. Squeeze fresh lemon on top for extra flavour!
