crunchy chickpea snack

In my opinion, one of the things that makes unhealthy snacks like chips so addictive is the *crunch.* These snacks have just that, but they're also high in protein and healthy! I have one sweet and one savory version for you. 

Sweet Snack Ingredients:

  • 1 can of chickpeas (or 1 + 1/2 cups) drained, rinsed and patted dry
  • 1 tablespoon of coconut oil
  • 1 tablespoon of coconut sugar
  • 1 teaspoon of cinnamon

Savory Snack Ingredients:

  • 1 can of chickpeas (or 1 + 1/2 cups) drained, rinsed and patted dry
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of curry powder
  • 1/2 teaspoon of sea salt

Directions for both:

Preheat oven to 400.

After chickpeas have been patted dry, mix the chickpeas in a bowl with all of the ingredients. For the sweet recipe, you may have to melt the coconut oil a bit.

Ensure the chickpeas are evenly coated with the mix.

Line a pan with parchment paper and spread the chickpeas evenly on the pan.

Bake for 30 minutes, check every 10 minutes. They should be golden brown and crunchy.

You can eat these on their own as a snack, or toss in salads! Get creative with the spices. Cayenne or cumin with sea salt is also a good combo.
