healthy doughnut bites
I love treats. I promise you that these taste JUST like chocolate timbits.... (my Canadian is showing) They're wonderful. This recipe makes about 12 balls.
- 1 cup of dates (soaked in hot water for 20 minutes)
- 1/4 cup of cocoa powder
- 1/2 cup of shredded coconut (split into two)
- 1 heaping tablespoon of coconut oil
- 2 tablespoons of organic maple syrup
- 3/4 cup of almond meal
Add cocoa powder, 1/4 cup of shredded coconut, coconut oil, almond meal and maple syrup.
In a separate bowl, add the other 1/4 of the shredded coconut.
The mix should be thick and gooey, roll them into balls (makes about 12) and then roll the balls around in the remaining shredded coconut. It will stick.
Eat right away or store in the fridge/freezer for up to 4 days.
