no bake granola bars
I've made a couple of different kinds of granola bars that you bake in the oven, but these no-bake ones are actually a little easier and sooo tasty and gooey. I like to make them on Sunday and have one in my lunch every day during the week for work. They also make for a good quick breakfast. Homemade granola bars will have far less sugar and preservatives than the store bought kind. This recipe makes 6 bars.
- 2 cups of oats
- 1/3 cup of natural smooth peanut butter
- 1 tablespoon of coconut oil
- 1/4 cup of pumpkin seeds
- 1/4 cup of shredded coconut
- 1/4 cup of hemp hearts
- 1/4 cup of organic maple syrup
- 2 tablespoons of chia seeds
- 1 teaspoon of cinnamon
- dash of salt to taste
Melt peanut butter and coconut oil together in a pot for only a couple of minutes - as soon as the coconut oil is melted all the way through.
Mix together all dry ingredients and then pour the peanut butter and coconut oil as well as the maple syrup on top. Mix every together. It should be a thick mix.
Line a pan with parchment paper and put the granola mix on it in a big rectangle. However thick the rectangle is, is how thick your granola bars will be. Wet your hands and mold it together so that it's packed tight.
Put tray into the freezer for 30 mins.
Take out the tray and cut the mix into 6 granola bars using a sharp knife.
Store in the fridge in tupperware or individually wrap them in plastic for up to one week.
