grapefruit bowl salad with cinnamon

I see this salad, and I can't stop thinking about summer. It's so close! I love using as many parts of whole ingredients as possible and I just couldn't resist using the grapefruit peel as a bowl. This is a very simple recipe that serves 2.

Ingredients:

  • 1 grapefruit sliced in half
  • 1 avocado, diced
  • 1/3 cucumber, diced
  • 1 tablespoon of lemon juice (juice of half a lemon)
  • 1/2 teaspoon of cinnamon

Directions:

After slicing the grapefruit in half, use a knife to cut around the peel making it easier to scoop out the grapefruit.

After scooping out the grapefruit from both halves, cut into small pieces.

Mix grapefruit pieces, avocado and cucumber in a separate bowl with the lemon juice and cinnamon.

Once the ingredients are tossed, serve in the grapefruit bowls.

For extra enjoyment, eat outdoors!
