on the go: lentils and rice

When life gets crazy, it can be tough to find the time to cook an awesome dinner every evening. I whipped this up one night as a "last few groceries in the house" kinda meal and ended up really enjoying it. Thought I would share it with you! It's even easier if you have rice or tomato sauce already prepped on hand. This recipe makes 2 servings.

Ingredients:

  • 1 can of lentils, drained and rinsed
  • 2 cups of spinach
  • 1 tablespoon of extra virgin olive oil
  • 1 cup of rice
  • 1/2 cup of organic tomato sauce

Directions:

Bring 2 cups of water to a boil. Once the water is boiling add the rice.

Turn the heat down to low and cook for 15 minutes or until the water is absorbed.

While you're waiting for the rice to cook saute the lentils and spinach for about 5 minutes with 1 tablespoon of olive oil on medium heat.

Stir the rice and lentil mix together, top with tomato sauce.
