Pretty pancake tacos are a fun twist on a classic breakfast and the perfect brunch to prepare for your mama as we get closer to Mother's Day.  I stuffed mine with apples, bananas and blueberries but you can use any fruit you like. I used the same pancakes from my easy peasy vegan pancake recipe. This recipe makes 3 tacos.

Ingredients:

  • 2 bananas
  • 1 cup of gluten free oats
  • 1 cup of almond milk
  • 1 teaspoon of baking powder
  • 2 and 1/2 tablespoons of coconut oil
  • 2 organic apples, diced
  • 1 teaspoon of coconut sugar
  • 1 teaspoon of cinnamon
  • 1/2 cup of blueberries

Directions:

On medium heat, add 1 tablespoon of coconut oil to a pan. Once it starts to melt, toss in apples, cinnamon and coconut sugar. Cook for 5 minutes or until apples are soft.

Set cooked apples aside in a bowl and toss in one sliced banana and blueberries. This will be your stuffing.

Now for the pancakes! Blend the oats until a powder forms. (Oat Flour)

Add in the other banana, almond milk and baking powder.

Blend together.

Add coconut oil onto a pan and cook at medium heat. I use 1/2 tablespoon per pancake.

Pour 1/3 pancake mix onto pan, making a fairly large pancake.

Cook each side for about 2 minutes or until you start to see holes appearing on the pancake.

Stuff the pancakes with the fruit mix!

Suggested toppings: cocoa nibs, shredded coconut, hemp hearts, chia seeds
