parmesan + lemon asparagus
Asparagus is a great source of fiber and a delicious side to add to any meal. The vegan parmesan and lemon combination is a wonderful mix of flavours. See for yourself! This recipe serves 2-3 people as a side dish.
- 1 bunch of asparagus
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice (Juice from about 1 lemon)
- 3 tablespoons of nutritional yeast
- 3/4 cup of cashews
- dash of salt
Preheat oven to 400 degrees.
To make the vegan parmesan, blend nutritional yeast, cashews and salt. Set aside.
Lay out the asparagus on a pan with parchment paper, spreading it out.
Drizzle the two tablespoons of olive oil, and one tablespoon of lemon juice.
Sprinkle half of the vegan parmesan all over the asparagus.
Bake for 15 minutes.
After it's baked, drizzle the other tablespoon of lemon juice and sprinkle the other half of the vegan parmesan.
Add a dash of salt to taste (optional)
