pineapple + lentil fried rice
Fried rice was a dish I never thought about trying to make myself - I thought it might be one I would always have to leave in the hands of restaurants. Turns out it's actually pretty easy, and this one is quite delicious. After having fried rice in a restaurant again my boyfriend and I both agreed that this version was tastier/healthier! This recipe serves two people.
- 1 ripe pineapple
- 1 can of lentils, rinsed and drained
- 1 cup of whole grain rice
- 8 basil leaves
- 1/2 cup of wheat free tamari
- 3 tablespoons of olive oil
- 1/2 cup of yellow onion, diced
- 2 cloves of garlic, minced
- 1/2 cup of corn
- 1 red pepper, diced
- 1/3 cup of cashews
Bring 2 cups of water to a boil.
Add the one cup of rice, reduce to medium heat and let the rice simmer for about 15 minutes.
Once the water has all been absorbed and the rice is cooked, drain the rice and set aside.
Slice the pineapple in half, and carve out a square in both halves. Add slices both horizontal and vertical to carve out pineapple pieces. You might have to scoop them out with a spoon.
In a pan on medium heat add rice, pineapple, lentils, basil, onion, garlic, pepper, corn and cashews with 3 tablespoons of olive oil and the tamari.
Be sure to continuously stir the mix, saute for about ten minutes or until rice reaches desired crispness!
Serve in the carved out pineapple. You may have some mix left over for round 2 or leftovers the next day!
