rice wraps + spicy almond sauce
You've probably seen rice wraps like this at Thai restaurants before..well now you can make them yourself! They're a great alternative to fried spring rolls. These make a great snack or lunch item to take to work, and they're super fun to assemble with friends or family. The almond sauce is so delicious, and that recipe was part of my training at the Academy of Culinary Nutrition. This recipe makes 4 wraps.
Rice Wrap Ingredients:
- 8 sheets of rice paper
- 1 avocado, sliced
- 1/2 carrot, grated
- 1/2 red bell pepper, sliced lengthwise
- 1/2 mango, sliced lengthwise
- 1/2 cucumber, sliced into long strips
- 1 cup of baby spinach
Rice Wrap Directions:
Soak one piece of rice paper in water until soft.
Lay flat on a plate.
Arrange all of the fillings in a row across the center, leaving about an inch on either side.
Roll it up like a burrito, leaving long edges open.
Soak a second piece of rice paper and lay it on a plate.
Place the wrap in the center of the new piece of rice paper and fold the second piece over the long edges and roll.
Repeat until you're all out of ingredients!
Almond Sauce Ingredients:
- 1/2 almonds
- 1/4 cup of water
- 1 tablespoon of lemon juice
- 1 tablespoon of tamari (organic soy sauce)
- 1 garlic clove, minced
- 1 teaspoon of ginger, grated
- Sea salt to taste
- Cayenne to taste
Almond Sauce Directions:
Blend all ingredients together until smooth.
I would eat all four wraps as a meal, or have two of them as a side. You can also add tofu in for extra protein or any of your favourite veggies!
