party appetizer: rosemary sunbutter + cucumber

I call this a party appetizer because they're the perfect healthy bite size snacks..they're also always a hit! This recipe was modified from part of my training at The Academy of Culinary Nutrition. This recipe makes enough for about 10 cucumber slices.

Ingredients:

  • 1 cucumber
  • 1 cup of raw sunflower seeds soaked for 2 hours
  • 2 tablespoons of fresh rosemary
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic, minced
  • 1/2 teaspoon of sea salt

Directions:

Rinse and drain the seeds.

Blend the seeds, olive oil, 1 tablespoon of rosemary, garlic and sea salt. 

Add a tablespoon of water if it's too tough to blend. You may have to stop the blender and push the mix down. It should be crunchy like peanut butter.

To serve, slice cucumber on an angle and add a scoop of sunbutter. 

Garnish with rosemary.
