soothing lentil veggie soup
Soothing is the best way I can describe this simple soup. There aren't too many ingredients (easy to prepare) and it makes a nice big batch leaving you with a couple of quick after school or after work meals. This recipe makes about 8 servings.
- 1 head of cauliflower
- 1 can of lentils, drained (or about 1 and 1/2 cups)
- 2 carrots, cut into coins
- 1 large sweet potato, diced
- 1/2 yellow onion
- 2 cloves of garlic, minced
- 2 tablespoons of coconut oil
- 3 tablespoons of curry powder
- 1 tablespoon of freshly grated ginger
- 6 cups of water
- 1 teaspoon of sea salt
Place the coconut oil in a large pot on medium heat with the curry powder and cook for about 3-5 minutes or until you can really smell the yummy curry powder.
Add onion, garlic and ginger. Stir all ingredients together for another 5 minutes.
Add the carrots, sweet potato, cauliflower, lentils, water and sea salt.
Stir all ingredients.
Cook until carrots are tender (about 30 minutes).
Alternatively, you can follow the same steps and use a slow cooker, and cook for up to 4 hours on low.
Blend half the soup in a high speed blender and mix back in with the veggie chunks. This will create a nice thick base. Enjoy a soothing bowl :)
