sweet side potato fries

I LOVE those sweet, sweet potatoes. There are so many ways they can be used as a side, but one of my favourite and easiest ways to serve them are as fries. Homemade almost always trumps restaurant food health-wise, but if you have to make a choice at a restaurant opting for the sweet potato fries is the wiser choice.  This recipe makes enough for 2 people as a side dish.

Ingredients:

  • 1 sweet potato
  • 2 tablespoons of extra virgin olive oil
  • a pinch of cayenne pepper (to taste)
  • 1 teaspoon of fresh or dried rosemary

Directions:

Cut the sweet potato into wedges. (As thin or thick as you desire.)

Spread the fries out evenly on the pan lined with parchment paper and drizzle olive oil.

Toss them around (I just use my hands) until the oil is spread evenly on the fries.

Add a dash of cayenne for a bit of a kick and some fresh rosemary for flavour.

Bake for 15 minutes at 400 degrees.

Enjoy as a side or on their own! I like to serve them with hummus, but I also enjoy them with some natural peanut butter. (I LOVE PEANUT BUTTER)
