sweet potato rosemary pancake

This is a healthier version of those delicious (but greasy!) homefries they serve at breakfast spots. I love the texture of this dish and it's a nice way to switch up serving sweet potatoes. This recipe serves 2. 

Ingredients:

  • 1 sweet potato
  • 2 tablespoons of extra virgin olive oil
  • dash of cayenne pepper 
  • 1 tablespoon of fresh or dried rosemary 

Directions:

Grate the entire sweet potato. (I leave the skin on) 

Mix in olive oil and spices, massaging the oil into the grated potato.

Shape into two pancakes on a pan lined with parchment paper.

Bake for 20 minutes at 350. The outside should look crispy.

Enjoy as a side or on their own!
