If you find yourself drooling over all of those avocado toast instagrams, but you stay away from bread, then this is the perfect recipe for you!

It's super easy and in my opinion, a yummier alternative to toast. This recipe could serve 2 people or 1 very hungry person (me). You can get creative with the toppings! In this post we will cover avocado toast and peanut butter & banana toast. Below I have the directions to cook the sweet potato in either a toaster or in the oven.

Avo-toast Ingredients:

  • 1/2 sweet potato (2 slices of toast)
  • 1/2 avocado
  • 1 tablespoon of lemon (juice from about half a lemon)
  • a dash of pepper to taste
  • 1 tablespoon of hemp hearts

Peanut Butter & Banana Toast:

  • 1/2 sweet potato (2 slices of toast)
  • 1/2 banana, sliced
  • 2 tablespoons of peanut butter
  • a dash of cinnamon to taste
  • 2 teaspoons of shredded coconut (optional)
  • cacao nibs to garnish (optional)

Directions:

Slice the sweet potato lengthwise into 4 slices of "toast."

Place sweet potato slices in toaster. 

Toast.

Flip over and toast once more.

If you're using an oven, preheat oven to 400 degrees.

Bake toast on a pan lined with parchment paper for 10 minutes on one side.

Flip each piece, and bake for another 10 minutes on the other side or until you can put a fork through each slice and it feels soft.

For avocado toast, mash the avocado with lemon and then spread on two slices of toast.

Top avocado toast with hemp hearts and pepper.

For peanut butter toast, spread each slice with peanut butter and add as much sliced banana as you desire.

Top peanut butter & banana toast with cinnamon, shredded coconut and cacao nibs if you like!
