tofu scramble

Good morning bellas! If you're vegan or vegetarian I'm sure you've had a tofu scramble at a restaurant before. Recreating it was surprisingly easy, and a great weekend breakfast option. This recipe makes two servings.

Ingredients:

  • 1/2 block of firm tofu
  • 1/3 red onion, diced
  • 1/2 red pepper, diced
  • 1 small tomato, diced
  • 1 clove of garlic, minced
  • 1 handful of spinach
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin
  • dash of salt
  • 1 tablespoon of olive oil

Directions:

Crumble the tofu into small pieces and place in a bowl.

Mix the turmeric, cumin and salt with 2 tablespoons of water and pour into the tofu. Mix it well, you might have to use your hands. Let it sit for a few minutes to soak up the spices.

In a pan on medium heat, add the olive oil, onion, pepper, tomato, garlic and spinach.

Let simmer until the spinach has wilted, and then add the tofu. Cook everything together for a couple of minutes or until the onions start to look translucent.

I served mine with some black beans, avocado and sweet potato fries but you can get creative! Salsa or guacamole would be a wonderful addition too.
