simple tomato sauce
This is a great sauce to have in your fridge for the week and it doesn't take very long to make. Just like the pesto sauce, this recipe is great on zoodles, flatbread or drizzled over a quinoa salad. Store in a mason jar in your fridge for up to a week.
- 6 organic tomatoes, chopped
- 1 yellow onion, diced
- 2 cloves of garlic, minced
- 1/4 cup of olive oil + 1 tablespoon
- 4 basil leaves
- 1 teaspoon of oregano
- dash of salt, to taste
Sauté tomatoes, onion and garlic with one tablespoon of olive oil for 5 minutes or until onions are translucent.
Add sauteed mixture plus basil, oregano, salt and 1/4 cup of olive oil to a food processor.
