easy peasy vegan pancakes

Nothing says relaxing weekend like a pancake breakfast made with love. Sometimes my boyfriend and I will wake up on Sundays and exclaim "pancakes!!" And we need to fulfill that desire.

This was a recipe I made when we didn't have much in the house, and so I'm confident you'll have no problem whipping up these vegan and gluten free pancakes. This recipe makes about 4 pancakes. 

Ingredients:

  • 1 cup of oats
  • 1 cup of almond milk (or your dairy free milk of choice)
  • 1 ripe banana
  • 1 teaspoon of baking powder
  • 2 tablespoons of coconut oil (1/2 tablespoon per pancake)
  • optional add ins: cinnamon, 1/2 teaspoon of vanilla extract

Optional toppings:

  • Berries
  • Shredded coconut
  • Pure organic maple syrup

Directions:

Blend the oats until a powder forms. (Oat Flour)

Add in the banana, cinnamon, vanilla extract and almond milk.

Blend together.

Add coconut oil onto a pan and cook at medium heat. I use 1/2 tablespoon per pancake.

Pour pancake mix onto pan, making a medium size pancake.

Cook each side for about 30 seconds, they cook quickly!

Repeat until you're done with the batter, about 4 pancakes.

Serve and enjoy.
