sweet potato + black bean burger

My non-vegetarian partner couldn’t get enough of these veggie burgers – hopefully that’s enough of a sell. I’ve tried a few different veggie burger recipes and this one is my favourite. The black bean and sweet potato combo is tasty and keeps you full! This recipe makes 6 or 7 large patties, and can be frozen for a later day.

Ingredients:

  • 1 can of black beans, drained and rinsed
  • 1 sweet potato, chopped and baked
  • 2 cups of almond flour
  • 1/2 cup of yellow onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of extra virgin olive oil
  • 3 tablespoons of ground flax
  • 1/3 cup of water
  • 1 teaspoon of cumin

Directions:

Preheat oven to 350 degrees.

Cut sweet potato into cubes and bake for 20 minutes. You may need to add a bit of water or a drizzle a tablespoon of olive oil to keep the sweet potatoes from being too dry.

Once cooked through, let sweet potato cool off.

Mix the ground flax with water and let sit for 15 minutes. This is an egg replacement - it's called a flax egg!

Once the flax egg is ready and the sweet potato is cooled, throw all of the ingredients into a blender.

Blend until everything is mixed well.

Shape mixture into patties and place on a pan with parchment paper to avoid sticking.

Bake for 20 minutes, flip patties and bake for another 20 minutes.

Top with my favourite green dip, hummus or your favourite veggies!
