vegan zucchini pizza boats
If you're like me then you crave pizza every day. These vegan zucchini boats are the perfect pizza treat without the gluten and added fat and sodium that comes along with a delivery pizza. This recipe is two servings.
- 2 zucchinis (1 per person)
- Daiya non-dairy shredded mozzarella (or dairy cheese if you prefer!)
- 2 tablespoons of extra virgin olive oil
- 1/2 cup of diced cherry tomatoes
- 1/2 cup of basil leaves
- 1 jalapeno sliced
Cut the zucchinis down the middle in half, and carve out the middle to hollow it out.
Slice again width-wise so that each person is served two small boats.
Add cheese and desired toppings. I use cherry tomatoes, jalapenos and basil.
Drizzle olive oil over each boat. Bake at 350 for 15 minutes.
These are a perfect appetizer for guests and pair nicely with red wine!
